Assuming someone else wants this somewhere down the line - for absolute cheapness AND trustworthiness go for Hotel Agadir in Fes-Jdid. Fes-Jdid has a rep for being rough but honestly I have never had a problem there and Karim at Hotel Agadir is one cool cat.

Travel Tips for Fes

Guides

I was not approached by many "false" guides (who in most cases a) do not really know the city or b) try to overcharge you, or c) try to take you to their brother`s/father`s/uncle`s shop or d) all in one), but to use an official guide for an introduction to Fes-El-Bali is highly recommended. They might even tell you the one or other odd information which you do not find in the guide books, and are pretty cheap (100 Dirhams per hour). They are also useful for navigating the city for the first time - as you will soon find out, orientation is mainly learning by doing here. A city map is only of limited use here.

Tanneries

The Chouaras Tanneries are what most visitors to Fes see, but there is a smaller tannery near Place an Nejjerine. From this square, take the path to the left near the museum, and at the end of the narrow street, you'll come upon some shops selling leather. If you climb the stairs in one of these shops you can look out over the tannery. There is probably another way to see the tannery but without a guide it will be difficult to find.

A Restaurant Palace !

I am not sure if I got the name right and I didn`t find this restaurant in any guide books, and above all, I wouldn`t find my way there back in the maze that the Fes medina is, but if you stay at Dar-el-Hana as I suggest, the host Josephine can organize that someone from the restaurant takes you there (and back). The restaurant had a stylish moroccan interior and the food was awesome, the portions huge, the prices fair, the service friendly. Especially the starter assortment was a treat !

Medersas

Squeezed in the narrow streets of the medina, these Islamic schools risk to pass unnoticed. Fortunately you ARE with a local guide that will call your attention. The negative point is that you are not allowed to enter in most of them, becoming restricted to a quick external look. A pity, but we have to respect their religious rules.

Royal Walls

The Palace complex is enclosed by high walls. Within those walls are beautiful gardens and a number of buildings which are built around large courtyards. The Dar el-Bahia is an official building which holds Arab summit meetings. There are mosques and a school for Koranic studies as well as a Medersa which was built in 1320.
