I don't think that you'll find much like that to rent in Djerba.
We returned from there on Tuesday (4th visit) the accommodation that we were hoping for was full, we found a 2 bed house to rent for 20TD per night. The Tunisian moved in with mum and we rented his house. However, most of the beaches along the east and south coast are lined with hotels, I don't think there are any apartments, not on the beach at least.
I think the better known resorts such as Sousse, Monastir or Mahdia would be a better bet for what you want.
I Could be wrong of course.

Thanks for this response.
How did you find the gentleman who you got the apartment from?
cheers

We just asked a local "tout" working one of the hotel gates.
The house was tidy but not finished, but then many aren't anyway.
The guy that we rented from is actually building two small, probably 2 bed houses, specifically to rent to tourists, unfortunately they'll not be ready until September. I do have a mobile no for him though if you should want somewhere in the future.

If you haven't found anything, its worth looking into Zarzis, which you may enjoy more than Djerba.

Travel Tips for Ile de Jerba
Some useful remarks
by csordila
Tunisia is one of the few places in the world where hotels, money changers give in most cases a better exchange rate than the banks.
The country is the most sophisticated, relaxed and tolerant state in North Africa. Women travelers are very safe when traveling alone.
The best seasons to travel to Djerba are spring or autumn. August is the hottest month of the year, sea breezes generally keep temperatures acceptable on the beach of Sidi-Mahrès, one of the most known beaches of the Maghreb, on the northern coast, but the island teems with tourists.
When taking tours, make sure the guide speaks English. If you do not ask, French will be the language spoken. Most of the residents speak French as fluently as Arabic.
Though the tour companies offer a lot of excursions, but the best way to explore the island is to hire a bicycle since the island is flat and very easy to navigate
Loud speakers !
by JLBG
This picture shows a close-up on the top of the minaret of another mosque in Houmt Souk (sorry, I do not remember the name of this mosque). Traditionally, the "muezzin" called for the prier from the top of the minaret. Now, loud speakers, as can be seen clearly on this photo have replaced human voice alone !
Golf at Djerba
by kbl
The golf course is not as spectacular as it is announced by the hotels. It has a 27-holes parcours (18 + 9).
Hcp 30 or better required to start the (most beatifull) Les Palmiers Golf equipment can be rent on site.
Woman in tradirionnal clothing with a young boy
by JLBG
On this picture, the woman with a young boy wears a black Djellabah with a red stripe at the bottom (you must enlarge the photo to view it). It is the same that the woman on the previous picture wears. Though I am not sure, they might belong to the Jewish community.
Fortress in Houmt Souk
by Kid-A
Unfortunately, I didn't get any information on this fort. All I can tell you is that it's near the harbor in Houmt Souk and it costs 3 Dinar to enter. All the information on the fort is in French and Arabic.
