For some local life, walk around in the area surrounding GP Hotel (in the evenings) or Kaiyuan Temple (in the daytime). I remember finding local wet markets and such around Kaiyuan Temple.
There're actually a large number of active places of worship (mainly temples) dotted all around the city. I think walking or cycling around would be an excellent way of exploring.
Quanzhou was the largest port city in the world back in the 13th Century. It is located in the southeast of the Fujian province.
Probably the most famous popular site in Quanzhou is the Kai Yuan Si. This is a large temple complex with two five-storey stone pagodas and a beautiful temple.
I visited Quanzhou in the fall of 2001.
