If you ever come to China, make sure to note the name of this dish down. It is very convenient, as it's about as common as Pizza in the US, and it is boneless meat which is kind of hard to get unless you know how to read a Chinese menu and are fluent in Chinese. Make sure to tell the cook not to make it too hot, or you won't be able to eat it even if you're used to spicy food. Especially in Sichuan, where this dish originally comes from.

This important water control site 40 kilometres from Chengdu is the key to the entire area's irrigation system - and it has been since around 250 B.C. Today it waters more than 6.7 million hectares of land. A film tracing the history of this massive irrigation system is on view to visitors at the dam.

Touching the gates... symbolic, purposeful, but in what way, I don't know. It's sad to travel without knowledge of all the traditions and cultures you visit, but it's so hard to know them all. Still, a bit of research would have done me well.
