Many people ask this question and I think its really a matter of personal choice. I always stay in Kowloon (Mongkok) as I find it has the most vibrant local areas in Hong Kong but most districts are central enough to make sightseeing and shopping easy to indulge in and the extremely efficient MTR system is an effective way to get to most parts of Hong Kong. Many people choose hotels that are in close proximity to MTR stations for this reason. If you are wanting to enjoy the best harbour and skyline views then I would choose a hotel looking towards Hong Kong Island from the Kowloon side.
Many hotels have specials during the year so once you decide when you want to be in Hong Kong I would recommend reserving a hotel room as early as possible. This is especially important during the Chinese New Year period when accommodation is highly sought after and of course as a result of this, prices are inflated. October is also a busy period as Hong Kong hosts numerous trade fairs.
If you are looking for a luxury hotel experience on Hong Kong Island then head to Central as there is a large concentration of 5 star brand hotels around the business and financial centre of Hong Kong. The Four Seasons and Mandarin Oriental are two of the best reviewed along with the Island Shangrila.
The Peninsula and Langham hotels in Tsim Sha Tsui, the Kowloon Shangri-La beside the Harbour, Langham Place in Mongkok and the newish Ritz Carlton in the ICC building would be the best known brand hotels in Kowloon. The Intercontinental is, in my opinion the best located hotel for Hong Kong skyline views.
At the other end of the scale is the wonderful YMCA in Salisbury Road TST which has a fabulous location and is extremely well reviewed.

The Kowloon Shangri-La is a very nicely appointed hotel. It is right on the harbour but I didnt realise until I actually saw the view from my room that the hotel faces more towards Causeway Bay rather than Central. Despite this the views, especially at night are still pretty spectacular. The public areas and lobby are spacious and opulent with chandeliers, comfortable couches, a grand piano and a large fountain. There is a bar area and a tapas bar.
The rooms are really large by Hong Kong Standards and I'm assuming this is because the hotel is 30 years old. Both the Deluxe and Harbour view rooms are nicely furnished in an underwhelming way but personally I found the decor to be a bit bland (brown/beige) without any of the high tech modern touches, aside from the remote controlled curtains that is, which I expect from a Hong Kong hotel room. The room I stayed in had been recently refurbished which surprised me however the bathroom was spacious and functional.
I did find all the staff I came in contact with were uniformly excellent. Nothing is too much trouble for their guests and, for me, this is what really defines a 5 star hotel.
The location is both good and not good in my opinion. The hotel is situated right on the harbour with the Avenue of Stars directly across the road (accessed by an elevated walkway). It is certainly away from the hustle and bustle of lower Nathan Road. but it is a decent walk (10 to 15 minutes) to the Star Ferry Terminal and around a ten minute walk from the MTR entrance (opposite the hotel) to the actual Tsuen Wan Line at TST. Taxis are plentiful though. A fare from the hotel to the centre of Mongkok will cost up to $40HKD depending on the time of day.
I liked how the carpet in the lift was changed each day. Nice touch.

At 1700 HKD for a cracker-box room that was supposed to include a free upgrade to business class, you should NOT have to pay 100 HKD per day for internet OR 78 HKD EACH for breakfast. The room was nice but barely bigger than the bed, and the staff was courteous enough, but the premium was definitely over the top! One night was enough, and never again!

Whenever my mum comes to stay in HK she stays in Causeway Bay at either the Cosmopolitan Hotel or the Holiday Inn Express. She has enjoyed staying at both but preferred the Holiday Inn Express as it is closer to my place and right next to Times Square. I find Causeway Bay really convenient as you are close to town but it is also very quick to get to the Southside. There is loads of places to eat, drink and shop all right outside your door. I think she usually pays between HK$900-$1200 per night.
The Hop Inn was recommended to me by my friend Carole, a fellow VTer, as she had stayed here recently. She did warn me that the rooms were small, but that the value for money and location far outweighed the size of the rooms!
Booking online direct with Hop Inn was an easy process and they only required 10% deposit to secure the booking. We paid $610HK per night for 10 nights for a double room. They also have single, triple and bunk bed rooms. Staff were extremely helpful and friendly, both with the booking process and during our stay, and I would definitely recommend this Hostel to the budget conscious traveller whose first priority is location location location!!!!
There are only 9 rooms in total at this Hostel. All rooms are airconditioned and have their own bathroom, although the bathroom is very small too! We were staying in the Birdlovers Room. Each room has its own name with very different and distinct artwork and decorations in the room.
Pros and cons of the Hop Inn are as follows:-
PROS: - Definitely the main advantage is the location, within walking distance to so many things, including Nathan Road, Victoria Harbour and many MTR stations. Also within 1-2 minutes walk from Hop Inn are 7-Eleven, Macdonalds, Pizza Hut, ATM, Nathan Road, Starbucks and MTR stops.
The price was outstanding value, at about $75AUD per room per night.
The staff were extremely helpful during our stay and were quick to grant us any request we had.
FREE wi-fi for your stay and if you dont have a computer of your own, they will even loan you one of theirs to use!!!
CONS: - Definitely the size of the room, as there is barely enough room to put 2 large suitcases on the floor. Also the bathroom is very small, with the shower actually over the toilet, so everytime you shower, the toilet gets wet! The shower was also a bit temperemental with pressure and temperature.
The bed was rather hard and small.
Located with window facing a rather busy street so sometimes it was a bit noisy.

The Stanford Hotel in Kowloon is conveniently located within walking distance of shopping centres, restaurants, the Metro and the famous Ladies Market.
The reception staff are extremely efficient and helpful with various aspects from organizing tours to assiting with internet connection.
The breakfasts that we enjoyed at this hotel was something to remember - they were an interesting mix of East and West.
Our room was comfortable and clean with a stunning view over the city skylyne.
The outstanding characteristic at the Stanley Hotel is that of the efficient management and fabulous breakfasts!

First and foremost this hotel is not for anyone !!!! The price is out of this world, but what isn't in Hong Kong ???? The Intercontinental must be or is one of the top 2 or 3 hotels in all of Hong Kong !!!! So awesome isn't enough to say about this hotel !!!! When I mean Perfect, I mean Perfect. from the minute you arrive, the service is out of this world !!!!
The location can't be beat !!! I don't care what anyone says, any closer to Victoria Harbour and you fall into it !!!!
Now let's talk about the room !!!! We opted for a full harbour view club room. The price was a steep $5,000 HKD with breakfast included for 2. But when we walked into our room, my jaw just dropped !!!! I had been in Hong Kong many times but never had a chance to just stare at the harbour the way we did out of our room !!!! I felt like I was in a HUGE postcard !!!!
Needless to say we stayed in the first night and order room service and just enjoyed the view !!!
If you can afford it, then do it !!!! Not sure if we can afford it to do more than the 3 days we were there, but what a great experience we had at this hotel. Now, the hotel has 5 restaurants that are out of this world !!! this place is meant to take your money and take it fast !!!!!
Everyone we encountered at the hotel were extremely nice and helpful.
It was like I was in a dream for 3 days and after coming back every afternoon of sightseeing.... it was great to walk in and just relax knowing your in the most perfect place away from home !!!!

When we made our reservation in the Holiday Inn Golden Mile we were attracted by the very central location of this hotel, and the assumption that this was a "sure bet" because the hotel is part of the Hiliday Inn chain.
Transportation from the airport to the hotel was very easy: we took the MTR Airport Express to Kowloon station, where we were immediately ushered into the free "K3" hotel bus-shuttle to the hotel entrance. The whole journey took 40 minutes.
The hotel is located right on Nathan Road, in the so-called "Golden Mile", a very convenient location, within minutes' walking distance to the Avenue of Stars, museums, Star Ferry, Kowloon Park and the main shopping district of Kowloon.
The Tsim Sha Tsui MTR station is immediately near the hotel, with excellent connection to all parts of Honh Kong.
Our room (on the 10th floor) was good and convenient. We heard some noise from the hotel air-conditioning system, but it was not loud. Although Nathan Road is always very busy, we did not hear any street noise.
The service at the front desk and by the concierge was very good.

I stayed at the Panda Hotel in Tsuen Wan Hong Kong for 4 nights in the first week of January, 2010. My experience was great and I have reviewed my hotel stay as given below.
The Panda Hotel is located on the outskirts of the Hong Kong City is the suburb of Tsuen Wan. However it is well connected to the heart of the city by bus routes as well as the Metro which in Hong Kong is called the MTR. The Tai Wo Hau MTR Station is a 5 minute walk from the hotel and gets you to Central Hong Kong (Tsim Sha Tsui & Central) within 35 minutes. The taxi drive from the airport is 250 HKD and takes 30 minutes. I would not rate the location as a constraint if you have that extra 30 mins to travel up and down.
The room is very well equipped with all the basic amenities. It has a flat screen TV, a comfortable bed, a side table and a sofa set and a clean and well maintained bathroom with a bath tub. If you are lucky to get a room above the 20th floor you get a good view as well. A Tea / Coffee Maker is also available and the facilities match that of an average 4* Hotel
