OK, not a lot of experience in Hua Hin but was there and personally was not impressed.
The beach was kind of neat in that when the tide is out youcan walk a looong way out from the beach. Even when the tide is not out you can wade a long way out.

There is supposed to be a national park nearby that should be pretty good to see. It is known for it's bird watching, I think it's called Roi Et, 100 peaks or something like that. However during the time frame that you are planning on being there it'll be somewhat dry. You'll be there at thew end of the dry season, very beginning of the rainy season though I doubt you'll get much rain. So, according to the season I am not sure what kind of wildlife you are able to see during the dry season. Usual wildlife watching is done during the wet season, at least the best chances of seeing animals is during the monsoon seasons. Same for the birds, it'll depend on the migratory season as to how many and species.
Sorry that I couldn't be more help.
Have fun

If you are staying at the main beach area of Hua Hin I agree when the tide comes in the width of beach is greatly reduced, but if you are in Takiab and in particular Hua Don Beach then you won't have that problem as the beach stays wide all day and night.
For things to do there are trips to Sam Roi Yot National Park south of Hua Hin which is a nice day out, temples and caves and also the mangrove swamps/mashlands and also the birdwatching area. You can also go north to Kraechan National Park for a more off road jungle trip. Temples at Phetchaburi are well worth the half day toru. Palau U Waterfall gets you into forst areas.
The day trip 2 hours south to Bang Saphan and Koh Talu island for snorkeing is a great day out which you should enjoy.
In town there are restaurants, night markets, bars. The Sasi restaurant and Thai Show is well worth seeing, close to the Hyatt Regency Resort. It is good value and they collect you if you are staing in Hua Hin, one price including the dinner and show.

Travel Tips for Hua Hin

Even the dog was quiet

I remember seeing a similar picture in Ivan's Santorini page...or it could have been elsewhere in Greece.

As you can see there wasn't much going on in the beach. Some of the chairs were folded and none of the vendors opened their stalls.

Slow train to Hua hin

by TangoTravel

Hua Hin is on the Bangkok - Syrat Thani rail line and is a 3.5 to 4 hour journey. For a second class air conditioned carriage seat the cost is about 220 baht.

Trains leave from both Hualamphong and Thonburi station. When purchasing your ticket in Bangkok beware of the '"officials" waiting around the station. they will try and lead you to a private travel agency where you'll end up paying more than the face price of the ticket.

An air conditioned carriage for a 4 hour journey sounds tempting; these carriages seem to operate at sub-zero temperatures. If you don't have a sweater at hand you'll find you'll be shivering.

The journey south travels at a variety of speeds; the most frustrating being the initial departure from Bangkok. For the first 20 km's the train goes no faster than crawl. The spped soon picks up and by the time you're into the countryside the train will be travelling at a respectable rate of knots. Food and drink is available on board as food hawkers traipse along the aisles looking to seel their wares. If you're from the west, you won't recognise much. Not a cheese sandwich in sight.

Go Karting

by Yammi123

It's fun but hot! We did the 26min 2 seater (950B for 2 people). and my friend did a 10min on the junior (400B). Interesting if you like go karting but 26min was too long and hot on the day we went. There were other people there but we got to do our own laps when we got there.

Another golden buddhas when you are finished in the monasteries. you can have more buddhas again...Gee, I have enough of them though;-)
