I have not visited, but this site will give you Halal restaurants in Ho Chi Minh City:
http://www.zabihah.com/sp.php?k=type+(optional)&l=ho+chi+minh+city
which should help you to choose a hotel location.

Travel Tips for Ho Chi Minh City
rental Vehicles and private tourguide
by no_second_chance
it is expensive for easy tours like Cuchi tunnel, mekong delta and City tour. BuT, it may be what you have to pay for PRIVATE tour. So you should consider whether it is worth. I myself don't think it's worth.
For your 2nd option, renting a van may be a good idea if you all can afford. there are lots of places in HCMC that allow you to rent a van with a driver. You should take a look at this site http://www.vietnamtravelkey.com/transfer/vietnam_car_rental.htm
For tour guide, there is a web http://www.hanoitoursvietnam.com/Vietnam-Travel-Services/Tour-Guide-Service/Hire-A-Guide/
OR http://www.toursbylocals.com/guide686
it probably gives you an idea how much you will have to spend if you prefer the rental van and guide for hire option, although you can get to see all of those destinations you mentioned at a much cheaper price by using a non-private tour by any travel agent ;).
Colonial buildings
by SirRichard
There were not as many colonial remants as I expected in Saigon. I tried hard, but all I found was a few buildings in the area of the Embassies, in the north of the Dong Khoi Central area.
It was not as in the "Indochine" or "The Quiet american" films, but the ones left were nice...
Open-up
by elPierro
Vietnamese people are very open and curious. So don't be surprised if they ask direct questions. They can easily tell you "you are fat" or "you are tall" or "you are so white". That's direct.. and all 3 are compliments, because Vietnemese people like tall, white fat people. It's this sign that you are not poor.
"Thank you" will suffice :)
You'll sweat no matter what
by lalikes
Of course, pack light. Bring light clothes; cotton and non dark clothing. Then when you're sweating your tushie off, no one will tell. And don't wear low cut shirts. I always pack a little medical kit. That goes for every trip. You never know when you'll need it.
Paintings at Nam Ky Khoi Ngia Street
by perseushermes
I wanted to get a nice oil painting and the ones at Dong Khoi Street was a tad bit expensive. Then I discovered the Nam Ky Khoi Ngia Street which "housed" a lot of painters and their paintings. The one I got (as per the photo) was from this shop along the road (photo - card). His place is near the pagoda in the map attached.
This guy COULD NOT speak english AT ALL! .... But the power of the calculator "speaks" a purchase for me. I won't say how much i got this oil painting but it was a bargain as compared to the paintings on Dong Khoi Street. His paintings are fantastic and the finishing is incredible.
You could get pictures with colored stones/seashells at Andong Market too.
