Learn some French
This is a French colony and the natives speak in their own local languages and French. At least be polite and try to learn some basic words/phrases instead of hoping/expected them to speak in English.

How much does it cost to eat in Nouméa? I mean restaurants, cafes and groceries. I have read in the travel tips that imported foodstuffs are very expensive. But can you buy local produce at reasonable prices? If so, what is available? Is there anywhere that's cheap to eat out?
Noumea is very expensive to eat at because most of the food is bought in from Australia or France.
Im not too sure about local produce, but as for a "cheap eat" there isnt one!
You can get stuff at the market at a reasonable price, but New Caledonia is in general expensive. Things like croissants and baguettes are quite cheap, but fruit and veg tends to be expensive.
As a guide, dinner for two (mind you I do like drinks with dinner) came to between 7000-9000 XPF.

One of the first sites we were shown during our initial tour of Noumea, was the Place des Cocotiers.
It's known as the central gathering place in the heart of the city's downtown. Concerts are held here, and when famous leaders are in town (as was President Chirac we were told), they come here to greet the locals.
The afternoon we arrived, it seemed to be a popular picnic lunch hangout for the area's local working people.
Without a doubt the worst part of the city is its Nickel refinery. Its situated to the north of the city centre and unfortunately cant be missed. To many of Noumeas inhabitants it is decribed a an eyesore but brings lucrative revenue to the island. Its downright filthy and a blemish to this beautiful city.
The furnace of Doniambo', is a multi-chimney and is very large in size making it one of the largest nickel refinerys in the southern hemisphere
OK, enough of sightseeing! :-)
For many visitors, Noumea's main attractions are the beaches.
There are several of them, but as I am not a fan of beaches, I only checked out the two most popular ones. I must admit they are very good for beaches in a major city!
Baie des Citrons is the shorter, quieter of the two main beaches. It is also the more sheltered one, usually better for swimming. It tends to attract a more "senior" crowd.
We had a good 4 days in Noumea on our way back to Japan. You can certainly spend plenty of time on the beach, but it's good fun to explore the markets, check out the Kanak cultural centre and enjoy the excellent cuisine on offer.
Oh, and bring plenty of money!
