Transport from Hvar Town to Stari Grad in the morning
I am planning on booking the ferry from Stari Grad to Dubrovnik which leaves early on the Saturday morning, however would like to stay in Hvar Town, so need to be able to travel from Hvar Town to Stari Grad early in the morning.
Does anybody know when the earliest bus from Hvar Town to Stari Grad is? Or how much a taxi would cost as another possible option?

When you arrive there you will found out.There is a bus organized to drive you to Stari grad ferry.It is the best to ask your landlords or Jadrolinija office. Also there is some kombi taxi so you can share costs with other travelers.
You can also go back 1 hour with katamaran to Split and then take bus to Dubrovnik around 5 hours.

Eating them alive, instead of cooking.
The sea urchins are considered a great and expensive delicacy on the Adriatic coastline. However they are easy to gather; all you need is a diving mask with a tube. Dive down to the seabed and catch as many as you can.
And local feature is eating them straight from getting them from the sea, while they are still alive!! It is so fresh that it moves when you touch it. You either just lick the insides out or, if you are feeling slightly more refined, you scoop them out with a small piece of bread.
Unfortunately... I have never developed much of an appetite for raw seafood, but I prefer my food quite dead first, and no longer moving.
If you cook them, they taste a bit sweet, like lobster.
if you´re looking for some good swiming & don´t want to step on people while doing it - there´s some really nice quite beaches you can visit by car or scooter.
Head against the town Sucuraj (the islands most eastern town) and you´ll find it. The sand beaches (we saw & tried 3-4 of them) is along the road between the small towns Jelsa, Humac and Poljica. So just drive along and keep an eye on the roadsides.
Jelsa is situated in the middle of the north coast of the island of Hvar. The settlement is concentrated by the sea while the hinterland is surrounded by dense pine woods on the sloping hills of the island's ridge. Jelsa is the only place on the island with an abundance of fresh water, which is the cause of more luxuriant vegetation than in the other areas of the island.

NOSTORMO - populary known in Hvar. The food is great and stuff is friendly and ready to recommend what is good. During the dinner you can listen tipical dalmatian music.
MARINERO - family restaurant. I would like to recommend for erlier after noon dinner.
Both restaurants has fresh sea food. NOSTORMO - rissotto with frutto di mare.
MARINERO - lasagne - not tipical, already known lasagne, but lassagne with sea food.
Leporini is owned by a fisherman, which guarantees the high quality of their seafood. The place has a cozy "konoba" atmosphere and good service. One of the best places in Dalmatia for seafood! Everything from the sea. Škampi na žaru (grilled squids) and vježa bijela riba I. klase (first class white fish) are excellent.
