Is it possible to visit Millau from Montpellier on a Saturday or Sunday (next May) using public transport? How long would it take?
Is it feasible to take a train from Montpellier to Toulouse and stop off to see Carcasonne on the way? Is there anywhere we could leave our luggage for a few hours while we explore Carcasonne?

This is the bus schedule from Montpellier to Millau. It's about 2 hours, better than the train because you have to change trains in Bezier.

Carcassonne is just a wonderful old town! But unfortunately there are no luggage lockers on any railway station in France these days, due to fear of terrorism. I myself just had to pass Caen in Normandy in May for that reason, going from Rouen to Bayeux.
You can't break tour journey to Toulouse.......you will need to buy a Montpellier>Carcassonne ticket, then a Cacassonne>Toulouse ticket.

Don't choose the English version, because it will take you to Raileurope, not a train operator but a ticketing agency which does not list all departures and charges commission on fares.
You could email the Carcassonne Tourist Info people about left luggage. Although there are almost certainly no facilities at the station there may be some in the town itself. Email them via this page:

Thank you to all for your helpful tips. I was going to spend two nights in Montpellier, but now I think I'll spend the second one in Carcasonne. I will be leaving Avignon by train on a Saturday morning. Would this give me time to go to Montpellier, catch a bus to Millau (mainly to see the bridge) and return to Montpellier on the same day. I could then take the train on the Sunday to Carcasonne and spend one night there. Does anyone know if the Hotel du Chateau is anywhere near the station in Carcasonne?
Your hotel is nearer the medieval city than the train station. It is about 2 km to the station if you walk. It's a bit farther if you drive because of one-way streets. It's a great location for La Cité and if you don't want to walk 2 km, take a taxi. Not so expensive (for lunch), the waitresses and waiters are also really nice, and have the sense of humor! Well, not a supprise I always take the same dish .... (like usual), I take a 'boulier', I's a kind of 'chinese calculator' (with balls). You can chose what you wish to put in your salad mix.
-Tomato, Different kind of cheese, chicken, cuncumber (beurk!), Corn...it should have around 20 things to mix as you want (or don't want).
As a desert, you can not leave the restaurant before eat the 'cherry crumble' (ok ok, may be a little bit of sugar in it ;) ) or the brownies (if your stomack is still 'empty'.
After you have lots of Chicken or Beef BBQ meals.... if you're not confident with my 'boulier' ;)
