From what I found on the internet and sign on the building:

Built over 300 years ago for the home of a wealthy merchant, Phillip Dietrich von Schrottenberg, and having had many changes of use. Now it is a very comfortable hotel right in the heart of beautiful Bamberg. There are 13 rooms of varying size and the nightly rate is from 100 to 140 euros, including breakfast.

Bamberg or Wurzburg

We have 2 days in Nuremberg and we were thinking of visiting either Bamberg or Wurzburg on 1 of the days.

What you suggest is the most worth to visit.

In my view, you might as well flip a coin, as both cities have so much to offer. Bamberg is just a very well preserved city with lots of beautiful old buildings.

Wurzburg, on the other hand has the Residenz, which in my view has got to be the one of the most attractive baroque (technically Roccoco) palaces anywhere. A magnificent staircase, leading to the largest fresco in the world. The palace gardens and church are stunning as well. The fortress Marienberg with tge chapel up on the hill, the old Main bridge and the many other sites around town are well worth the visit.

I would tend to lean to Wurzburg.

I would go for Bamberg. Both cities are well worth visiting, of course, but Bamberg is closer and on a two-day trip I'd rather prefer not to spend a lot of time on the road. Then again, I love Nürnberg and would probably end up spending both days there.

(On a side note: Stay away from the Bamberg Rauchbier. It is possibly the worst-tasting beer I've ever had. Like liquid, half-decayed salami *shudders*)

Ah I love Bamberger Rauchbier!!!! Yum!
(Try it, you'll either love it or hate it, there is no 'in between'.)

Bamberg is one of the very few cities in Germany that survived World War II without any destructions. So the old town is authentic, not a post-war reconstruction. This is what makes Bamberg unique.

I liked Bamberg, too. It's not that much of a huge city but very cute...
Würzburg has a huge castle that is very impressive - but for the city I prefered Bamberg.

I was in Bamberg last month and really enjoyed it. It is, as stated before, absolutely authentic and there are some wonderful pics to be taken around the area of the Alte Rathaus. I did find that a lot of eateries and just about all the shops were closed on Sunday. So if you can avoid visiting on Sunday, you would be better off.

With the exception of tourist souvenir shops, all shops in Germany are closed on Sundays, not only in Bamberg...

Charming Waterfront

Bamberg puts its best face on the waterfront. All of the buildings are meticulously maintained and most put out flower boxes under the riverside windows. Nothing could be more pleasant than a stroll along the river in Bamberg's old town.

Gärtner und Häcker Museum

The name of this museum - English translation: The Market Gardeners' and Wine Growers' Museum - points to the more personal history seen inside. It's a really small operation nestled into a back street and I ran across it on accident. This restored house of a gardener has 3 recreated living space rooms from around 1900, some rooms showing the tools of the trade and other daily life items, an upstairs attic with memorabilia and some old traditional dress, a room full of the religious items of this group (the museum houses them but they are still used), and a backyard with a full garden showing all of the plants that a market gardener would grow. It was interesting for me to see more of the life of an average person, since it is all to easy to stick to palace visits in Germany. The man working there was very friendly and willing to answer any questions (though our conversations were in German so I'm not sure how English accessible it is), especially since I was the only person there! For background information in English, there is one sheet which gives the basic info (you may need to ask for it), though labels are all in German.

Address: Mittelstrasse 34. Only open between May and October on Wednesdays and Sundays. €2 admission.

Rauchbier and hearty bavarian food

It's a pretty nice place, noisy and lively. When I was there the crowd was of the middle-aged category.
The food consisted as the usual bavarian fare, which means plenty of sausages and roasted meat with potatoes.
The star is definitely the Rauchbier, a dark brew with a strong smoky taste. The restaurant is also a microbrewery - perfect combination! Rauchbier :o)

The Old Town Hall

The Old Town Hall is a building that stands in the middle of the river. From the bridges you can see ecclesiastical Bamberg with its towers and looking to the other side the Little Venice (Klein-Venedig) as is call the line of old fishermen's houses.
