Central Hotel Eden
Wow! Convenient-city! You couldn't be closer to the train station unless you were in it. It's not particularly "central" to the center of Mainz, to its main attractions and sites, but it is ideal if you are looking for a place that's going to be an easy "schlep" for you and your luggage.
I had an early morning translantic flight to catch from the Frankfurt Airport - and it was an easy "commute" from Mainz, on a direct commuter train route, about a half hour journey from the hotel to the airport. I highly recommend Mainz as an alternative/supplement to Frankfurt.
The Central Hotel is an older property, and feels like it hasn't been substantially updated since 1965. But it has a particular faded charm that I liked a lot. It's a far cry from the corporate banality of the 21st century! The elevator is "charming" (i.e. old) and the rooms resemble dormitories, but you could pick up a free wireless connection in the hotel lobby, and in the bar, the drinks were cheap. Also, as a Tulip Inn a tasty and substantial breakfast buffet was available for a song. Oh, and I got a great off-season rate here.

Excellent location for train connections.
In 2011 it was in the process of being completely renovated inside. No idea when it is scheduled to be reopened.
It was, a nice older, well maintained, hotel directly across from the HBF / main train station. Normally the breakfast is included in the price but, sometimes not. It is best to check. I have used it several times and been satisfied. It is one of my favorites.
Unique Quality: A 2 minute walk (even at a slow pace) into the station. The hotel is conveniently located and quiet, also has a very good gourmet restaurant. Mainz has very good train connections into the FRA airport, Frankfurt HbF, Rhine river cities and throughout Germany.

Tulip Inn
Unique Quality: The Tulip Inn was built in 1887. Although the glory days have passed from this once posh, now faded hotel, it's still big on charm and conveniently located across from the main train station.
