Having only stayed at one hotel in Athens, I can only recommend The Philippos Hotel. Boutique style, only 10 minutes walk from the Acropolis, with a view of the Parthenon from the top floor of the hotel.

Everyone was more than accomodating. The breakfast was excellent with many options. Housekeeping was phenominal! Beds were sort of harder than usual but aren't they always in other countries? Business center was free. Mini Bar stocked daily, they put extra of the stuff that you use, because they know you like it. The concierges offered us rides to the airport for a small fee, but cheaper than taxi and too early in the morning for the train. Location was excellent, our balcony overlooked a nice little side street with a view of the Acropolis' Parthenon. Very close to attractions and public transportation. I highly recommend this place! The coffee is dark and tasty!

Our stay at the Philippos Hotel was very nice. The location is perfect, only a couple hundred meters from the Acropolis. I very enjoyed the fact that the hotel was in a quiet area of Athens so you can enjoyed a good night of sleep!!
Unique Quality: The privately owned Philippos is the most ideally located in the heart of the old city district, just a few minutes walk from the famous Acropolis and the atmospheric back streets of the Plaka, the Herodes Atticus ancient theater and the new museum of the Acropolis, main business and shopping areas.
This superior Tourist class hotel, was recently renovated.The hotel features 50 rooms, fully air-conditioned, each with private bath-shower facilities.
At your disposal are: Bar-Coffee shop, Atrium, conference halls, internet access.
Getting There
Athens International Airport(ATH) is 31 km (20 miles) from the city. Express Bus no. 95 runs to the airport from Sintagma Square Metro station every 15-20 minutes 24 hours a day. The Philippos hotel is one stop away from Syntagma at Acropolis Metro station.

On Santorini, we stayed in a quaint Pension called the Golden Star, in Fira. There was a nice pool available at all times right outside our room.
The rooms were spacious, which was a change from The Philippos Hotel in Athens.
Bit of a hassle for married couples - everywhere we stayed they had single beds!
Hotel Philippos has a great location. It's the small brother of the herodion hotel. The hotel has not so maby rooms, most of the rooms are quite small, but they have also larger rooms for bigger families. The larger rooms have all a very big balconny. Breakfast is rather poor, but that's not the most important thing for a hotel. If you are looking for a place in a nice neighbourhood and you can't afford a four star hotel, this hotel is a good alternative.
This is a superb hotel around the corner from the Acropolis. I found that the staff on the front desk were extremely helpful with all matters and were very polite. The location was excellent being only 5 minutes away from the Acropolis and less than 10 from the Plaka. The area was very quiet, but that was due to the fact it was the end of January and very much out of season.
The double room was big enough for the two of us especially with the massive in-built wardrobes and the heating from the air conditioner was more than adequate. The bathroom was lovely, spotlessly clean and an amazing bath/power shower on the 4th floor, putting my shower at home to shame. The breakfasts were adequate with a range of pastries, ham, eggs, bread, fruit, cereals etc. There was no restaurant, however, but there were plenty in the local vicinity. The hotel staff put us in one of the few rooms that had a view of the Acropolis, which was beautiful at night.
We stayed at the Phillipos on a five nights for the price of four deal from their website. Although 5 days was perhaps a bit too much for Athens, the hotel was quite good all round. The rooms are perhaps a bit small, so if you are the type that spends a lot of time in the room, perhaps it's not for you. The location is wonderful, very close to the Acropolis as well as the Acropoli metro station. The staff was also very helpful, recommending the Vitro restaurant around the corner, as well as offering to change our room after one night. They moved us into a wonderful room on the 7th floor which has a fabulous view of the Acropolis. All in all I would highly recommend the hotel.
Room 13'x10', beds were two small separate singles, shower, adjustable air conditioning/heating (although no off button), room safe, fridge, hairdryer. No alarm clock. Good sized lifts.
Hotel presents fairly well from the street but the room reminded me of a cheap motel in a small town. There was no ventilation in the bathroom - unpleasant enough but made worse by the foul smell coming from the drain in the floor of the bathroom - we had to keep the door closed to get some sleep. Breakfast was very poor with the coffee that bad it was undrinkable (worst of our whole European trip).
My husband and I stayed for two nights prior to leaving on a 2-week yachting adventure with Poseidon Charters. This is a small, clean hotel in a great location in Athens. We simply wanted a place to sleep, rest during the day and store our stuff, so it was great. The single beds are hard and the rooms are small, but it is what we expected so we were happy. We chose our "destination" hotel in Santorini where we planned to spend time by the pool and enjoying the view.
