The Santorini cooking is very similar to that of the nearby islands. But here is one speciality.
Take 2-3 onions, 2 large tomatoes, mint, salt, pepper and flour.
Chop the onions up fine and grate the tomatoes. Mix with flour, salt, pepper, mint and half a glass of water to make a thick paste or batter. Heat olive oil in a frying pan and spoon dollops of the batter into the hot frying pan to make a small round pancakes.
