I went to Santorini last summer in July and it was pretty packed. There are a ton of people walking around all day and night, especially in the more popular parts of the island. We decided to book a room ahead of time, and to be honest it seemed like there were definitely rooms available even with all the people there.
I remember specifically that each time we got off a ferry for a different island, there were various people waiting for the passengers, offering them rooms, cars, etc. during their stay.
While I felt more comfortable having booked a room ahead of time, I wouldn't say it was absolutely necessary, but here is the agency we booked through last year - their service is excellent and I'm sure they will be able to answer any questions you have regarding the need to book your hotels ahead of time.

A Truly Bizarre Island

Santorini must be a real geological oddity. It's amazing the way the island just pops out of the ocean, with incredibly steep cliffs rising up to the towns. The drive from the port to our hotel in Fira was one of my most hair raising experiences. The fact that they built roads into the cliffs is an engineering marvel. I still have no idea what possessed people to settle here, but I'm glad they did.

Because of its proximity with Fira, it is connected with a public road or by the old path, offering a tremendous view as you walk along the rim.
It's only a 20-minute walk and one that must be on your itinerary.
GYROS - A FOOD TIP !

Ok, let’s get the name right first. It is pronounced like it looks. ‘G-rows’ would be the correct way to say it. Do not overcomplicate ordering the fast food of the Gods! They can be made with Pork, Chicken or Lamb. I find the pork is the best, but that’s just me. Add some Tzatziki sauce, onions, tomato and the odd few French fries to achieve perfection. This is then wrapped lovingly in a pita bread. The important ingredient is that this must be put together and wrapped by an old Greek man who does not talk and looks positively miserable. They make the best Gyros! If they look happy when they make them, they are not doing it right. I have listed a website so you can make them at home, but they are best in Greece. So, book that holiday and flight tickets and go and enjoy a Gyro or two in their natural surroundings!
Cat Nap

Maybe the cats have the right idea...find a little cubby-hole, curl up and take a nap! Too much walking up and down steps gets a VTer tired! So, don't forget, you are on vacation! Relaxing is OK! And if you have a friend, all the better!
