Most of the vineyards are in fact situated north of Tokaj. If you have a car, try to get to one of the small villages over there... off the beaten path, this is quite far from the tourists (and then even more difficult to find an english speaker) but the landscapes are wondeful...

For me, the highlight of my visit here was tasting the world famous Tokai wine. One of the greatest wines in the world. To be shown about the wine cellars and then have a bottle specially prepared for me.

Wine of the King, King of the Wine

Tokay wines come from an area located in the North-East of Hungary named ‘Tokaj Foothills. An area which main city is... Tokaj!!!
Even though Tokaj Wineries are producing dry white wines, it is especially with sweetened tastes that Tokaji became famous. In hungarian those white sweet wines are called "aszu" : this can be translated by "liquor-like". This label, associated with its amber dress, its taste and aromas, induces Tokaji Wines met in direct competition with others international very-late-gathered-grapes wines.
So, the Tokay is the world's finest "late-harvest-liquor-like" sweet wine. Its high content in sugar is measured in "puttonyos", which corresponds to the quantity of noble grains built-in in the clear wine. By noble grains, one understands the grapes which spent more time on the stock, therefore which remained longer in the sun and which thus is gorged out of sugar.
One speaks about "botrytized" grains because they were also touched by a Botrytis mushroom which confere with the grape its "noble rot".
"The wine of kings - the king of wines" - is what Louis the 14th, of France is reported to have said as he popped the cork on another bottle of Tokaj wine. This high quality didn't fade with time. You should taste this real "Hungaricum" !!

At the heart of this process is a fungus called Botrytis cinerea or noble rot. The vintage are only made in november so that this fungus has the time to develop; In fact the 'rotten' grapes (called Aszus) contains less water and more sugar. They also have to be picked individually to make sure they are suitable for the wine.
During the winemaking process, these berries are mixed with regular white wine. The number of 25-kg tubs added to 135 liters of wine is called 'puttonyos'. The more puttonyos, the more sweet is the wine. It can range from 3 to 6...
