Please recommend nice restaurants that locals would go

We are from New York City, going to visit Rome in a week. Since my wife is in charge of museums and hotels, my responsibility is to find some nice local eateries. I'd very much appreciate if some of you can recommend some nice eateries or restaurants that locals would go, and please exclude Pizza and pasta.
Also we are interested in exploring Trastevere neighborhood.

Exclude piazza and pasta! You would not be in Italy if you excluded those great Italian specialties.
A top-notch restaurant in the Trastevere is Il Tulipano Nero, the Black Tulip. Located at Via Roma Libera, 15 this place is a true local spot. We love it.
Margutta Vegetariano RistorArte is not far from the Spanish Steps. Do not be put off by the vegetarian menu; you will not miss meat for one meal. Located at Via Margutta, 118 film director Federico Fellini dined here regularly.
La Campana is Rome's oldest restaurant. Located at Vicolo della Campana - north of Piazza Navona this is a great spot for lunch.
Ristorante Ranieri offers old world charm with great food. It is near the Spanish Steps at Via Mario dei Fiori, 26.
Enjoy the Eternal City and have some pasta. If your trip includes a Thursday night in Rome, it is traditional to eat gnocchi.

Drinking water

When its hot in Rome an ice cream is fantastic. But water is also needed. There are plenty of mobile kiosks selling drinks and prices do vary. One thing that is excellent in the Forum and Palatine Hill is the availability of drinking water taps. There are about 3 or 4 in the Forum area and same on the Palatine Hill. The water is fresh and cool so you can refill your bottles for free. The occasional maps showing the monuments also point out where the taps are situated.

This custom has become very popular among roman people who like to live the night until late, after the last club closes and the city lights switch off to be replaced by the daylight. This is an appointment you can't give up: a hot, smoking croissant ready to eat soon taken out from the oven. Simple, with cream or chocolate, with marmelade or honey... Delicious!
You can find bakeries open 24/7 all over the town where people gather to have their late croissant as the final step of the night or the beginning of the day, as well!
Some of the best in the town center are: "Fior Fiore" in Campo de' Fiori, "Laboratorio Lambiase" near Porta Pia, "Laboratorio Pasticceria" in Trastevere via del Cinque.
Rome zoo in Villa Borghese park

Isn't he adorable? There is a zoo at the northeast end of the huge Villa Borghese park. There is a fun little playground inside the zoo. Not much for food choice inside though, make sure you have already eaten or bring some snacks with you. This zoo is only worth it if you have children and time.
Public Transportation

Rome has two subway lines, other four or five city trains and thousands of trams and bus lines. It's pretty easy to reach every address starting from anywhere. The ATAC website will provide you information about public transportation and the VIA MICHELIN one will provide you information about streets and everything. Tickets cost € 1,00 and you can go anywhere within 75 minutes (only one trip in subway). My advice is to buy a weekly or monthly pass, they are very very cheap.
Spaghetteria - Pizzeria L'Archetto - good pasta

I would have never found this restaurant, but I was lucky to have a local there so I happened to find myself in this place.
It's quite a nice one. I liked the interior, lovely (like the in the pic). Food is good (I was told it's not the best place for pizza, but for pasta it's one of the good ones), just the service sometimes is a little bit lousy. Yet, quite a nice place. I know they have also tables out in summer. Spaghetti al limone - was interesting and great, I loved it.
The dessert - let's say so-so, but not so bad :)
They have a big varaiety of pasta, another thing I liked there was the names of meals, quite funny.
