On average, the ice cream you find in Rome is very good. I mean I can't really remember the last time i had a bad ice cream in Rome. However, if you want something really special, my suggestion is Il Gelato di San Crispino.The flavours vary according to the season and they are always looking for new textures and mixtures. it's simply unique.
the original place is in Via Acaia 56, near San Giovanni Basilica.
now it's open also near the Trevi Fountain in Via della Panetteria 42.
