I've worked out what you mean. I would never book a hotel like this: I like to fully research and check hotel reviews and location before I book anywhere.
But if I did book like this then I would explore www.lastmminute.com or www.laterooms.com for both France and Milan. Both are reputable, long-established and reliable sites.

Do you mean one of those hotel booking sites that offers you a hotel of a guaranteed minmum star rating but only reveals its name and location when you book?
I have come across such sites - mostly UK and US based where they are called "Secret Hotels".
There have been a couple of questions on the Forum from people asking if it is a risk worth taking - and the answers have been positive.
However I go not know of a site that specialises in selling hotel rooms exclusively through this means. They just seem to crop on a number of different sites

Thanks for the links! The reason why I want to explore this option is that I did it about a year ago (forgot from which site) and got a great deal. A room at the Hyatt Regency London Hotel - The Churchill for a third of the original price. But as you pointed out, one might not always get lucky.
