we are planning a trip from Vienna to Merano and on to Salzburg, hoping to use all rail transport. What kind of service will we find between those cities?

What do you mean - what kind of service? Train service. Fairly frequent service.
In any case it would make a lot more sense to go from Vienna to Salzburg, then to Meran (with changes in Innsbruck and Bozen/Bolzano). You would have to go from Vienna to Meran through Salzburg in any case, or take a HUGE detour across half the northern Italy.
Use www.oebb.at and www.trenitalia.it for schedules and fares. While both sites have the schedules for the neighbouring country they will only show fares up to the border. The border station is Brenner/Brennero, which belongs to both railway organisations.
