Transport from Pisa airport to San Gimignano

I am arriving in Pisa on a late flight from Eidinburgh arriving about 9pm into Pisa, I am not too sure if its best to book a hotel at the airport to travel the next day to San Gimignano. Either way, what are my public transport options? Would appreciate some help. Many thanks

There is a train from Pisa Centrale to Poggibonsi-San Gimignano that leaves at 21:29 (change at Empoli), but I can't believe you'd make that.
There is also a train/bus combo. The train leaves Pisa Centrale at 22:30 and you arrive at Poggibonsi-San Gimignano by bus at 00:45, again with a layover in Empoli.
I keep syaing "Poggibonsi-San Gimignano", because the train station they share is actually in Poggibonsi, some 6-8 kilometers away by road from San Gimignano - i.e., when you arrived at the station at that hour, you would still need a bus to take you to San Gimignano. Actually, this is the train station; I'll have to make sure that the bus from Empoli goes to the train station also.
Anyway, the net of all this is to suggest that you'll really enjoy the trip better if you spend the night in Pisa, maybe walk around in the morning, then take one of the trains that leave at least once an hour to San Gimignano (always with a change in Empoli). The daytime trips are 1.25 to 1.5 hours, and this will surely be more fun than spending nearly 4 hours (from the time you arrive) sitting in an airport/train station/bus stop/en route at a very late hour...

P.S. Oh, if you decide to take the 22:30 bus from Pisa Centrale after all, note that there is a train station at the Airport, and that this particular train actually leaves from the Airport at 22:20, goes to Pisa Centrale and then continues on to Empoli. So if you want to do that, you don't have to leave the airport...

The Towers

This is what one can see from the far distance when approaching to San Gimignano, small townlet on the tophill and very tall towers which rip the sky above it. Amazing and almost unreal scene in the middle of the tame landscapes of Toscana. Why so many tall towers here?
Museo del Vino

One of the newer Museums in town is the Museo del Vino (Wine Museum), which is located just outside the Rocca (fortress), on the western side of town.
The Museum is run by the Vernaccia di San Gimignano Wine Road Association, and is a tribute to the quality and prestige of the Vernaccia white wine produced in San Gimignano. It is known as the finest of the Tuscan white wines.
A visit to the museum will give you a journey through the production of Vernaccia. You can gain an understanding of the origins and history of the wine and the production methods used today.
It is an odd little place, but worth having a look at when you are visiting the fortress next door. Admission is free, but you will have to pay if you want to do some wine tasting.

St John's Gate is probably the first thing that most visitors see when they first arrive in San Gimignano as its near a couple of big car parks at the southern end of the town. The gate was built by the Sienese in 1261.

Back alleys and side streets, main squares and piazzas, it really does not matter San Gimignano is really lovely.
The buildings in San Gimignano are quite exquisite. You really feel like you're back in the middle ages.
Rocca di Montestaffoli & Wine Museum

This fortress dates from 1353 and offers a wonderful view over the northern part of the town and the surrounding countryside.
The museum of wine is on the left hand side of this photo. The museum offers visitors an itinerary through the wine culture, with multimedial demonstrations about the cultivation of vines and the wine production in the area. You can also taste some of the local wines.
