Lovely hotel and worth the money
This was by far the most expensive accommodation we stayed in during our Baltic holiday, but it was worth it in terms of comfort and location.
We decided to stay at the Mabre Hotel because we were travelling with our two year old and were keen on the option of a room with a private lounge attached (where we put her travel cot). The hotel is an old monastery, and our room seemed to be a converted attic - that sounds rather spartan, but it was beautifully done and very spacious.
Unique Quality: The hotel is centred around an enclosed courtyard - this is a real bonus in central Vilnius, where parking is at a premium, and also gives a sense of privacy and exclusivity. The location on the edge of the Old Town is also a huge advantage.
The service and amenities are excellent, and all that you would expect from a hotel of this calibre.
There was a good buffet-style breakfast that set us up for the day - otherwise we didn't eat in the restaurant, but my impression was that it was quite pricey by Vilnius standards.
My only quibble is that the hotel is located on a bend in quite a busy road (Maironio Street). As cars slow down to negotiate this bend, they change gear, and so there was quite a lot of traffic noise in our room: we were there over a hot period, so we left the windows open, which exacerbated the noise. This would not be so much of a problem in winter when the windows were closed, or if you were staying in the wing of the hotel that doesn't abut the road, so bear this in mind if you're a light sleeper.

This is probably my favorite in the city (based on my trip in the 90's, so check a more recent report!)
It has excellent rooms, and great character (a former monastery, I think), plus it is very central.
Unique Quality: It has character.
