I believe there are some along the cliffs around Dwejra and near Qala. Maltese limestone quarries tend to be deep rather than extensive in width.
This page has info and pictures (scroll right down to 'Gozo Quarries', click on a link for Gozo map):

Thank you LEICS and pieter_jan v for your really prompt response.
Your information is exactly what I required.
www.gozo.us/ is an amazing site for all information on Gozo.
I look forward to visiting the amazing quarry Ghajn Abdul at Dwejra Bay.

You do realise you wil not necessarily be able to enter? Working quarries are just that...working, and not open to all.
Closed quarries will probably be closed off for safety reasons.
But you should be able to see at least something from the roadside/fence.

Hi, I just happened to see your question. I don't know if you've already come and gone but in case you're still coming...
Will you be staying in Gozo all the time? If you're going to be in Malta and have some time to spare, you could visit the Limestone Heritage in Siggiewi, which is an old quarry converted into a museum with exhibitions of tools used over the years, stoneworks, and so on. I think it could interest you. Personally I've been there twice and really liked it - and my dad who's a construction worker enjoyed it too.
Quarries are quite dangerous sites so I don't know if you'll be able to enter. Most probably as Leics told you you'll be able to see something from outside though.
Good luck ... and hope you'll enjoy your stay!

Gozo is magnificent. Some Quarries that you find in Gozo are at San Lawrenz and Qala that are most popular.
Travel Tips for Gozo
Ggantija Temples opening hours and tickets
by Diana75
The Ggantija site, part of UNESCO World Heritage, can be visited from Monday to Sunday from 9 a.m. to 5 p.m. (last admission 4:30 p.m.).
The way from the entrance to the site goes near the North Cave and behind the temples.
The ticket office is near the temples and costs around LM 1.5-.
For more details visit my Ggantija Temples page.
Azure Window
by Angelinka
The Azure Window is the highlight of an area called Dwejra, that looks like a moonscape: it´s an area rich in geological faults and quircks and the result is an inland sea, bowls in the land, islands stranded off the coast and tha Azure Window. The Azure Window is an arch that loops over the water to create a rectangular window at sea level, no wonder it is the most photographed feature in Gozo.
Victoria - the capital town of Gozo
by Angelinka
Victoria is the capital city of Gozo. Its older name is Rabat and many people still refer to it by that name. The town i strategically placed near the geographic centre of the Island of Gozo, with all roads leading to and away from it. The town is built on a high point and the Citadel is built on a hill that is over five hundred feet above sea level, making it the second-highest spot in Gozo.
Exchange offices on Gozo
by Diana75
For the ones who need to change some money, there are four banks in Victoria, APS Bank, Bank of Valletta and HSBC, in Republic Street and Lombard Bank in Ninu Cremona Street.
All banks have an ATM service and there are other ATMs and automatic exchange in Marsalforn and Xlendi.
Information boards
by Diana75
For the tourists that don't have a guide books, but want to now more about the places they are visited, in some of them informative boards are presenting some details about the places' history and features.
I found such boards, written in English and Maltese, in Ggantija temples and at the entrance to the Rotunda.
