You may want to read the following regarding opportunities to swim with dolphins and the cruelty involved.

Google 'PETA' - lots more info. there.

I was to say the same as the person above. Sorry if this is not the answer you expected.
In any case, swimming with dolphins is not possible in Ibiza, and as far I know, anywhere in Spain

Balearic Islands, Spanish Islas Baleares, archipelago in the western Mediterranean Sea, and a comunidad autónoma ("autonomous community") of Spain coextensive with the Spanish provincia of the same name and established by the statute of autonomy in 1983.
The archipelago lies 50 to 190 miles (80 to 300 km) east of the Spanish mainland and has a land area of 1,936 square miles (5,014 square km). There are two groups of islands. The eastern and larger forms the Balearics proper and includes the principal islands of Majorca (Spanish: Mallorca) and Minorca (Menorca) and the small island of Cabrera. The western group is known as the Pitiusas and includes the islands of Ibiza and Formentera. The archipelago is an extension of the sub-Baetic mountains of peninsular Spain, and the two are linked by a sill near Cape Nao in the province of Alicante. Packing List

by Beach_dog

This is the beach where the ' poor ' people go... they have spent all their money getting to Ibiza... and cannot afford to buy swimming costumes ;0) Face powder to hide your blushes. They dont like cameras here... hehe. Absolutely nothing required... except a smile :0) I think you must be an 'alpine climber' or a 'sailor' to reach this beach... but there are beaches more easily accessable.

Club tickets

by Sol&Jo

Get tickets in advance for a club instead of paying at the door. Its a lot cheaper and you get into the club a lot faster. Many bars sell tickets for various clubs.

A friend of ours befriended a bar manager who ended up selling him tickets to two clubs we were going to for half the price you would pay at the door!

And buy in bulk as well. You can haggle with the promoters that way and get better deals.

Upscale Club? On Ibiza?

by Jmill42 about Pacha (Club)

I had heard that Pacha tended to be a more upscale party, sometimes with famous celebrities and models dropping by. Well, I can say that the repuation was correct. No celebrities, but loads of models and a bit less wild of a party than Amnesia or Privilege. It still was an awesome time though! Omer and me had about every drink in the house here, and thank goodness the first one was free, because they are expensive!

The DJs the first time I was at Pacha were Smokin' Jo, Miguel Migs, and Pete Tong.

Tickets 30 Euro Clubwear, but a bit better stuff than Amnesia or Privilege.

Hire a "Little Boat" to get you there!

by Geisha_Girl

Travel to the party island can be quite comfortable. There are ferry services from all of the nearby ports (including Valencia, Barcelona, Majorca) and the ride is very comfortable and relaxing.

Take note of that because it may be the few 2 1/2 hours of sleep you may get during your entire stay on Ibiza! ;-)
