I'll be in Toledo for one day without a car. I'd need to cross the river and I think I read somewhere that there are scenic overlooks. Is there a bus that goes that way? Does it stop at the scenic overlooks? How often does it stop there? Are there any better ways of doing this?

There is a tram that takes you around the city and across the river where you can get a very similar view. I don't like referring people to my pages, but there is a photo on my Toledo page that I took from the tram which I like very much. I don't remember the cost of the tram but it was not expensive and very entertaining as you see all around. It leaves from the Zodocover (spelling?) and you can purchase tickets at the TI just off the plaza. I highly recommend it for this and other views of the city.
I'll second what rexvaughan wrote about the tram (actually a motorised tourist train). Takes about 45 minutes to do a lap of Toledo and is travelling quite slowly, so plenty of opportunities to snap away. I suggest you buy ticket early and then stand at the train stop early so you can get a good position on the train - its a bit of a bun fight with everyone pushing to get on. I've taken almost the same photo as the wikipedia photo and is on my Toledo page.
What David says about arriving early to get a good seat is correct and seats on the right side of the tram (facing forward) will give you the best views over Toledo.

A taxi will take you there and pick you up for a reasonable fare.
The Cathedral is the centrepiece of Toledo. It sits on top of the hill and is deceptively large. When you enter you will be confronted by sparkling gold reliefs, huge oil paintings and portraits of all of the Toledo Cardinals going back at least 500 years.
In front of the wood house, was this woman statue... We took some pictures cause it was kind of nice and remembered us to a Disney cartoon... But when we saw the picture, the eyes and the mouth were red (and in real life they werent)....
just around 60min from Madrid, one does not need much packing...but have good footwear, you are on your feet a lot, suncream and lip protection...this City is a hot place...right from May till oct. the narrow streets just keep the heat 'conserved' and throws it right into to face again, keep your fluids up!!
There are SO MANY beautifull views from Toledo, in every single angle... In every single part... But to see the "panoramic view" of the river Tajo, it's just amazing... In the rocks in front, the birds rest, but with a single noice, you will watch hundreds of them flying and then, returning again to their place at the stones...

Hay tantas vistas bellas en Toledo, en cada sentido, en cada parte. Pero ver la "panoramica" del rio Tajo es increible... En las rocas de enfrente, descansan cientos de pajaros, que al mas leve sonido levantan el vuelo y luego vuelven a su lugar en las rocas.
