The absolute must-see in Madrid is the Prado. Now, of course, I don't have pictures (although if I were cool, I'd scan in a Velazquez). So bear with me. The Prado ranks up there with the world's best museums, but it is designed with the sole purpose of p*ssing off English-speakers. The descriptions are in Spanish only, and the guidebooks have everything listed in the wrong order, so that the room where Durer should be actually has Raphael. That kind of stupidity. Now, for the biggies (Velazquez, Goya, Titian, etc.), they have little 100-peseta guidebooks available in little vending machines next to the exhibits. These are good, and in English. Don't buy a 'real' guide, just stock up on the little ones, and ooo and ahh at the incredible works of art.
