Hotel Astoria Palace: Nice hotel, Great location!
I was in Valencia in May 2008 and I recommend this hotel. I'm not sure what price range you are looking for. This is not a cheap place. I loved the location. It's right in the heart of the old town area. I could walk to about all the historical sites. There are many restaurants and bars in the area.

Holiday Inn: holiday at the Holiday Inn
Spent 4 days at the holiday in with my family (3year old and 5 month old) we had a great time.
We ate at the breakfast buffet every morning, the restaurant was quite good. The room was very comfortable and provided us with a crib for the baby. Hotel was within walking distance to the aquarium, museum of Sciences, the City Center.
I was under the impression that the hotel was near the port but it is about a 45 minute walk! Also a 30-45 minute walk to the train station.
Great place to stay with little kids, the place was full of families
we paid about 130 euros a night
