You have two options.
Bus is cheaper, but slower.
Train is faster, but more expensive. The railway station is in the airport itself.
www.nationalexpress.com will give you bus times and fares. Journey takes 6+ hours, costs around 33GBP one-way.
www.nationalrail.co.uk will give you train times and fares. Journey takes about 4 hours, with at least 2 changes. Costs around 50+GBP one way.
I think you should look at the coach service run by NATIONAL EXPRESS and review options and costs.

Alternatively you can search for a suitable train fare that will suit your arrival time. Sometimes you can find Advance Fares that can be pre booked and may be worth buying. For example using Cross Country Trains you may find single fares for £26. These are Advance fares so read the booking conditions. Only use certain trains on the route.

The route taken is firstly south on the Stansted Airport to Tottenham Hale (& Liverpool Street) train then change to get on the Victoria Tube train to St Pancras where you take a train to Sheffield.
Total journey time from leaving Stansted is under 4 hours.
There are several different routes (and probably many, many different fares)between Stansted and Sheffield.
For example a quick search on nationalrail.co.uk gave these choices
Stansted - Peterborough (change train) - Retford (change train)- Sheffield 3hrs 24 minutes
Stansted - Tottenham Hale (Change train) - London St Pancras (Change train) - Sheffield 3hrs 34 minutes
Stansted - Peterborough (change train) - Doncaster (change train)- Sheffield 3hrs 16 minutes
I suspect that by not going through London, the fares may be less expensive but much depends on the time of day, day of week, how many weeks in advance you buy a ticket etc.

This Millennium Bridge gleams aside the old Waterloo Bridge where only trains pass now. Walkers-by along the bridge can take in a very good view of both the London Eye and the Embankment buildings along the Thames.

Traveling on the tube is the basic way to get around London but one thing that you have to know is that on the tube, it is almost common courtesy not to talk. When you do talk when riding the tube, make sure that it is quiet and quick. We got a few stares when riding the tube while chatting.
Another thing is ESCALATORS. In other countries, people seem in less of a hurry, and stand on both sides.

No, you must stand on the right only - there are two lanes, see. One (the right) for standers - the ones not in a hurry, with time to ponder the finer things - and the fast lane on the left, for those always on the move. Block this lane if you dare. You will be subjected to the full might of Londoner's huffs. It is really annoying when people just stand there and don't let you through, so be prepared for this.
