Zukim offers a few mud-huts (eco-lodges) for rent. This is far off from Eilat (2 hours) but might be a good stopping point if you wish to break the long way to Tel-Aviv, or if you just want to experience staying in the desert the ecological way. Also spelt Zukim or Tsukim.
Stayed 1 night in this hotel and was very satisfied with it. The room was big and clean, but the bed was a little too short for me. Breakfast buffet was superb and I liked the swimming pool. Location is perfect if you arrive by bus, as I did. Also very close to the Eilat airport.

Very good cheap option for Eilat. The accomodation is nice and clean. It is located only 2 minute walk from the bus station and about 10 minutes downhill to the north beach.
The only downside is that the guys working there have Israeli Big Brother on the TV all day, everyday.
Actually every tv in every hostel in Israel has Big Brother on. You have been warned!
Being part of the International Youth Hostel Association you get a pretty standard plain Jane stay for a cheap price. Clean with the basics, rooms have a TV , private shower and A/C with breakfast available.
Eilat is very central and it's walking distance to everyplace or a short inexpensive cab ride for $2-$3 USD.
As I was going to stay only one night in Eilat I chose to stay at Arava Hostel as it is close to the bus station. The dorms are small with two bunk beds in each. There is an air-condition in the room and it was blowing right to my bed. I tried to close it as much as possible but it was still too windy for me. The others wanted to open it more so finally someone changed bed with me.
There was never any queue to the bathroom so there seems to be enough. There is a kitchen to use, but you can also buy breakfast (from 8 o’clock).
I paid 50 shekels for the bed (during low season the beds are 35 shekels). Internet one hour is 12 shekels and a big water is 6 shekels.
Most of my friends here have small and nice apartments to rent. One of them is very special - a beautiful Beduin tent with aircondition, toilet, shower.....I also could help people to find nice Israelis to live with...like we do in Germany with the "Mitwohnzentrale".

Good possibility to meet domestics...nice open and helping english, hebrew and german speaking people in Eilat.
And i'd like to take care about children while you're diving or enjoying Eilat's nightlife.
Eilat seafront is lined with large luxurios hotels. From a distance it reminded me a little of Las Vegas. I'm sure you could find many of them online, and many with the big decrease in tourism here pick up a very good deal.
We stayed in a self contained apartment, on the edge of town. It was a very inexpensive alternative.
We looked for a cheaper option, instead of hotel, local accomodation, they rent separate rooms or apaprtments that are independent of the main house.
Price was for two rooms apartment 60 euros per night, the price of a hotel for a night in a double room was minimun this one, so for 3 was great.
We used to seat outside in a little patio, the owners were very hospitality
Another option for staying in Eilat is renting a room that is offered by the Locals. Many people in Eilat are building a nother room/s near their house or in the ground floor of the Villas.
Mostly this rooms are nice and simple, including bed's, fridg, bath little kitchen and stuff like that.
The prices are quite cheap and its a nice solution if you dont want to stay in a hostel or in an expensie hotel.
The problem is to find this houses, as not all are published on the net, so you should ask the locals as well.

This hotel is just in front of the Observatory, and looks very interesting, maybe one day i am richer lol and i cna afford it, jejejejej not now by sure....
Eilat has wonderful hotels along the coast and in town.you can find all kinds of hotels, cheap hotels, Hostels, appartment to rent, small hotels, In clubs and luxury hotels which are really wonderfull.I love this place. In the picture you can see the view on the Royal Beach hotel.
