in 1997 i lived almost one year in turkey working as a tourguide.
i went to cappadocia several times as my girlfreind back then (who was turkish) had a good freind who ran a travel agency there.

i would suggest that you stay in the town called goreme when you are there.
it's by far the most scenic town in cappadocia.
goreme valley is really amazing.
you can hike around the region or rent a scooter.
you can also take a guided trip when you are there if you don't feel like driving yourself.
it's a place worth spending 2-3 days seeing at the very least.

just be prepared that july is very hot in the region.
