According to the aztec legend the goddes Mayahuel was in love with Quetzalcoatl, her grandmother didn´t allow her to marry him so they ran away together.
The furious grandmother released a monsters called TziTzime, they hunted the couple and killed Mayahuel.
Quetzalcoatl buried the remains of her body and after some time the first magueyes grew from this spots.
After some time Quetzalcoatl teached the human kind how to prepare pulque from the maguey juice
The pulque became so important between the aztecs that only governors and pregnant women (the high protein content made childrens born very healthy) were allowed to drink it appart from Mayahuel celebration days.
The pulque maintained it´s importance during the spanish domination and the first years of independence, according to records there were over 3000 pulquerias (the place were pulque is selled) by 1900, but beer producers launched a discredit campaign in order to have more consumers and unfortunately they were succsesfull, today pulque has almost dissapeared from major cities (currently there are about 150 pulquerias on Mexico City)
Pulquerias were famous by it´s murals and names, you can order "pulque blanco" (natural) or a "curado" (pulque with some flavor like Melon, Mango or Pineapple)
