hola!
i actually never heard about anybody staying in tuxtla... do you want to visit the canyon del sumidero? why don't you go to the wonderful city of san cristobal de las casas, from there you can book day tour of the canyon by minibus, and there are lots of nice hostels and posadas in san cristobal!

when i visit chiapas, i stay in palenque, then leave to can cun or isla mujeres, so, but i remember san cristobal las casas you will find easy acomodation and more ,,,rustic tourits there, palenque is an option too now, tuxtla is ok but is a 'bigger' city, but if you stay there too, take a trip to chiapa de corso, and there take the ride to El sumidero canyon, will be a breathless expierence, believe me ,where to stay is not so worry,
