Considering the Comfort Inn Emporia in Emporia?
A VT member wrote the following comment about visiting Emporia:

Large yellow flowers that open in the evening and on cloudy days along roads are salsify. The large seed puffs from salsify are fun to blow on and make a wish. If you dig up the roots of this plant you can make a simple soup with some milk, butter, salt, and pepper. First time I did it I was foolish and dug up the biggest plants with the biggest roots. The bigger roots are the oldest and toughest. Small plants with tender roots are much better.
