The story, as I remember it, goes like this: Long ago, during a transportation strike, a New Orleans cafe owner would give free sandwiches to the workers who had no money to pay for food. The cajun owner would make special sandwiches on bread that resembled a miniature baguette. When a striker would come in, the waiter would yell to the cook, 'here comes another one of those po' (slang for poor) boys', and that is how the sandwich got it's name. This chain makes great po boys, and for only a few bucks. There is even a drive through window. Shrimp Po Boy

Cajun culture = French colonial culture melded with mainland French traditions already in Louisiana, and with Spanish, Native American, English & German influences. Slow-cooked & highly seasoned food, heartfelt music & carefree attitude...are things associated with the culture.
