The Gauchito Gil Legend

In 1874, a police line catch and killed Antonio Gil in an ambush near Mercedes. The legend tells that before dying, he said to the policeman that shot him: ?you have an ill son, when you return to your house he is going to be healthy, although you killed me". When the police returned to his home, his son was cured; and that was the begining of an interminable sequence of miracles which are attributed to the Gauchito Gil. In his grave, (national route 123) there?s a cross with a red rag, which is one of the gaucho?s characteristics, which became his standard.

SURUBÍ (Pseudoplatystona)
This specimen is one of greatest that can be found in the argentinian rivers. Arrives to weigh 50kgs and to measure more of a meter. Mate
This infusion made with YERBA MATE, was used originally by the guaran?es Indians. The Jesuits who has settled down in the zone improved its cultivation and with time this drink became popular in all Argentina and good part of the neighbor countries.
The recipient in which the "mate" is served, can be the traditional one, made of pumpkin, or of wood.
The mate is can be sweet or bitter and you drink it with a bombilla (sorbet), there are many kinds an types of bombillas. The water is directly from the pot served or through a thermus and it must be a few degrees under the boiling point. If it boils, if the water boils it can not be served.
In Corrientes there are remarkable craftsmen who make quality mates and excellent sorbets, that can be used to enjoy mate with friends or just like decoration objects.
Chipa
Who visits Corrientes, hardly wont taste chip?, typical product of guaran? origin, ideal for accompanying mate.
Ingredients (24 units): ? kilo of fresh cheese, 750 gr. mandioca flour, one picks of salt, 4 eggs, 250gr. of fat and ? milk cup.
Preparation : smash the cheese and mix it with flour and salt. Put the mixture in a crown form, leaving the center free to put the eggs and the fat. Combine all that adding milk until you obtain a soft and smooth dough. Make little breads, cutting the superior part. Take an oven grill, put some butter and take it to the oven.
Chamame
Chamame is the music that it identifies the correntinian people and the littoral. Kilometro 11, from Transito Cocomarola and Constante Aguer, is a true hymn of Corrientes. The Chamame Museum is in Mburucuya.
