We are flying in to Porto Alegre in the end of August, and we are staying for a weekend(friday - monday).
We want to stay at a farm-like pousada(fazenda??) near Porto Alegre(we have considered Canela or Gramado, but other suggestions are appreciated)?
Want to experience nature, animals, horsebackriding, hiking, Gaucho-lifestyle..
Any suggestions where to stay?
We will travel the backpacker-way, but with a medium-sized budget. We can afford to stay at a good pousada for a few days.
I can't make any personal recommendations, but I found this site that has quite a few listings, with photos, links and descriptions.
It is in portuguese, but a picture is a picture and you can check the websites or call any hotel that interests you.
Good luck!

Gramado and Canela are interesting places but if your main interest is to stay in a pousada and find about gaucho life-style, perhaps you should skip both. I suspect other places such as Vacaria, Sao Jose dos Ausentes or Pelotas would be better destinations for you this time. They are in opposite directions, so you'll only have time to visit one. Pelotas is very easy to reach with an extremely comfy direct bus service from Porto Alegre, the journey takes 3 hours (can't remember the cost).
I'll list some pousadas, there are of course many more but they don't always have websites.

Vacaria:

I haven't been to any of the above so far, good luck :)

I don't know if it's a cultural tip or off the beaten path..think both..in the MARIO QUINTANA CULTURAL CENTER or in the IAB CULTURAL CENTER(INSTITUTE OF THE BRAZILIAN ARCHITETS)there are many nice and interesting expositions with some young talents from the university.I have to show you some pictures of my good friend,SUZIENE DAVID,who study arts and will be a professional photografer. She just shows,in the b&w pictures,a little of the typical faces of our people.Suziene also helped me since the begining of my studies making with me a lot of pictures of interesting houses or historical sites to use in my project..here is an atribute for her work..i had her approval for it,by the way..
IF YOU REALLY,BUT REALLY HAVE TIME,TRY TO VISIT THE FEDERAL UNIVERSITY OLD CAMPUS,LOCATED(AROUND 11 HISTORICAL BUILDINGS..)AT SARMENTO LEITE STREET.IT'S QUITE EASY TO SEE YOU ARE THERE,IT'S A MAGIC VISIT TO THE HISTORY OF THE CITY!DON'T MISS THE MEDICINE SCHOOL BUILDING,IN FRON OF FARROUPLILHA'S PARK,IT'S MY FAVORITE!A PICTURE OF THE LOBBY OF THE BUILDING!
Another good tip is to go to the Moinhos de Ventos park for a round and explore the neighbor streets, especially the Padre Chagas street with the coffees and the Moinhos de Ventos shopping center, where you can find bookstores, restaurants and more. On the closer streets there are also sushi bars and other stuff .
Built in a portuguese neoclassical style, the theatre opened it's doors in 1858. It is one of the most beautifull spectacle houses in the country. The audience seats are disposed in a horse shoe shape. The restaurant on the second floor is open to the public for lunch or afternoon tea. Visitations from Tuesday to Fridays, from midday to 18:00.
