Just across from La Compañía you'll find a couple good heladerias (ice cream shops). Be sure to try the Queso Helado (literally cheese ice cream), which is somewhat of a local delicacy. I'm not sure if there's actually cheese in this concoction or if it's just frozen milk with some sugar and cinnamon, but it sure tastes good.

Pleasant alternative eating with relaxed atmosphere and vegetarian food, a great departure from the more typical meat of fish dishes popular in Peru. Papa a la huancaina is made with cold potatoes covered with a rich sauce made of egg and cheese. It's generally quite spicy and this one was served with some fried cheese on the side.

COLCA CANYON
Most people who visit Arequipa take a tour out to the Cañon de Colca, one of the worlds deepest canyons formed by an enormous seismic fault between the Coropuna (6425m) and Ampato (6325m) volcanoes. The tour can be arranged on arrival in Arequipa at one of the several tour operators or travel agents around the Plaza. Many hotels can also arrange this activity. Although a tour can be fit into one day, it's best to go for at least 2 days, staying the night at the village of Chivay (3633m) the first village on the edge of the canyon.
Remember to bring a swimming costume and towel for a visit to the thermal springs on the outskirts of Chivay. (Open 0600 - 1900. Entrance $1.50)
Beautiful unspoiled Andean villages line both sides of the canyon. In addition you'll have great views of the smoking Sabancaya volcano, one of the America's most active volcanoes, as well seeing the many traditional pre-Inca agricultural terraces which line the steep valley sides.
The high point of the tour is an early morning visit to La Cruz del Cóndor (3320m), a 1½ hours drive from Chivay. From this natural observatory you can see into the deepest part of the canyon, and witness the majestic flight of the Andean Condor, rising on the morning thermals (at around 9am

arequipa is a stunning city, and well worth a visit if time allows on any peruvian trip. alot of the time, due to short itineraries, and the fact that cusco/machu picchu is more popular (and rightly so) alot of people miss this city. if you have the time, dont make this mistake, because arequipa and the nearby colca canyon are a delight.
arequipa is known as the 'white city' because of its fabulous 'sillar' architecture. sillar is a white volcanic rock that is easily workable, and thus the colonial buildings that can be found here are beautifully crafted. monasteries, churches and fancy mansions - all glistening white in the sunshine.
all this stunning architecture means that arequipa is a unesco world heritage sight, and rightly so. as unesco states on their website:
"The historical center of Arequipa is an example of ornamented architecture, represents a masterpiece of the creative coalition of European and native characteristics. A colonial town challenged by the conditions of nature, the indigenous influences, the conquest process and evangelism as well as for a spectacular natural scenario."
