Luggage and bags: For us it was easier to leave a suitcase in Cairo and only take one bag between us to Dahab. I would recommend you have a day backpack in Dahab also to carry around bottled water, camera, a snack etc. Although you're so close to everything in town that it would probably be just as easy to carry nothing but some cash & your room key... ;)
Clothing/Shoes/Weather Gear: Take your swimmers, sandals/thongs, a towel etc... Bascially resort/beach wear will fit in all over Dahab...
Miscellaneous: Make sure you take lots of sunscreen and always carry water (& toilet paper/tissues).
