    Jollof rice is common to many parts of West Africa and can be served in many ways. It is usually spicy and nearly always a yellow colour. Sometimes it is served with vegetables and meats cooked in, and other times as an accompaniment. It is usually very good. Here you can see it served with grilled snapper.

    A very spicy pepper soup with goat meat. Although very tasty, I found it hard to separate the goat meat from the bones. I tried with the spoon, a knife and fork, my hands and my teeth, but only managed to free a little.

    In Ghana and other parts of West Africa, yams hold one of the greatest esteem of all the food products and are carefully integrated into the social, cultural, economic and religious aspects of life. A high status is given to this vegetable, and traditional ceremonies still accompany its production. Yam comes in various colours, from white (shown in the picture), through yellow to a fairly bright orange. The white variety is most widely used.

    Yam can be used instead of potato, boiled or mashed, and in fact I prefer it to our humble spud.

    Banku is a ‘dumpling’ made from a sour, fermented corn mash which is wrapped in plantain leaves and boiled. It is to be eaten with your hands (right hand only).Here it was served with fried tilapia and an extremely spicy salsa-like fresh sauce.

    Red red chicken is a sauce of black eye peas with gari (course cassava flour) and chicken, served with plantain fried in red palm oil. It was very, very tasty (there was also additional chilli served in a small dish separately), albeit a little greasy. There are variation with other meats or fish available too.

    This dish is served in many restaurants all over Ghana

    I loved these little deep fried dough balls, called bo froot, which were available from street sellers everywhere. They were very hot, very filling, very sweet and very cheap, not unlike the western doughnuts in taste and texture.

    At lunchtimes, we would usually stop at a small local café or bar, where we would have the use of the facilities in return for purchasing drink.

    Daniel, the chef who travelled with us, would set up his bush kitchen, and would prepare us a nice salad and a main dish of rice, potatoes or pasta with vegetables and/or meat. Dessert would always be fresh fruits. Kofi, Osman and Lucian (the mini bus drivers) would assist with the food preparations, while Noah would sort the drinks with the waitresses in order to speed things up.

    Some of the ‘facilities’ were better than others, and on a few occasions we would use toilets in another establishment while still eating/drinking in the café. On one occasion we used a bush toilet prior to the lunch stop, as no facilities were available.

    The service was always good in this places and the system worked very well. Cleanliness was always a main priority, and bowls of water would always be provided for hand washing.

    This is a popular place for Peace Corps volunteers to hang out. Christie Atubiga and her boys make sandwiches, sell grocery provisions, and provide a place to talk. The television is usually on. Good current advice on what to do in the region can be found here.

    The food is good, but what makes this place worthwhile is the friendly atmosphere. Everyone becomes part of the family once they step though the door.

    Readily available and reasonably priced, African Queen is a rough local spirit which is nonetheless quite acceptable. We always like to try the local food and drink, so of course we had to give this one a go, despite not being a fan of local ‘whiskeys’.

    Star beer is locally produced, readily available, reasonably priced and very palatable. What more could you want? Star beer is brewed by Guinness Ghana Ltd, and is said to be Ghana's favourite beer. It was certainly my favourite whilst in Ghana.
