At laaaast !!! Four hours later, our tajine is finally ready.

It was midnight. Sarah woke up (she was having a little nap, Ramadan is indeed pretty tiring), I stopped smoking the "chicha" (narguile), we were all ready to taste our meal with some Moroccan bread and ... our fingers of course !!

Hmmmm ... this tajine was the best I've ever tasted ;-))

Buy some good meat (chicken or lamb, but no pork please !)

Euh ... actually ... may be you can try to find another butcher shop than this one on the picture !

Don't forget the olives, currants and different spices (coriander, safran, curcuma, paprika, cumin, ginger, ras el hanout)

Camel Market guelmim morocco

Yes, again i refer the camel market. Althouth you're not going to see anything more than almost a theater for tourist to see, it somehow can be interesting. If you're not able to SEE THE REAL thing in any other country you should at least came here and see how does it look like. Check my Nouadhibou's (Mauritania page) to see a real Camel market!!

This market is held Saturday morning and starts working at 6am. buses arrive a bit later than that so you should be able to enjoy it better without the dozens of tourist packed in buses coming from major cities like Agadir.

On Saturday also is held a big and THIS YES IS INTERESTING, Saturday suq, where people come all over the region to sell their goods in town. you can get from sheeps to jewlery, to grains to vegetables, all you can imagine.
The market is located on the road to Tan-Tan a few kms from the city itself.

After you peeled the potatoes, the zucchinis and the carrots, cut them into pieces, made your peas boil, sliced the onions, you can pour some oil in the terracotta recipient called "tajine", add the meat, the onions and the spices and allow the dish to simmer. When the meat seems cooked, add the rest of the ingredients and wait .... Cooking a tajine takes a lot of time so be patient ... very patient .... very very patient.
If you're getting bored while waiting for your meal, why not preparing some pomegranates for the dessert ?

To eat a very good tajine... there is no better way than cooking it ourselves with the instructions of a master in this art!
You just need 3 or 4 hours to do it!!!!! So...patience is very important.... We did it while we were tired and starving (I guess you can see it on the picture!!!)...but the arward is so big when you can finally taste it! Delicious!!!!
