On our way from Gabes to Sfax, we passed row after row of olive trees. Sfax has been the center of the olive trade in Tunisia and Olive Oil it is also the most important agricultural export commodity of the country (Tunisia ranks second to Spain in the world Olive Oil Exports). We didn´t see much of Sfax in our night stop, we just walked around the hotel and have some teas in the Cafés nearby. After a night in the mediocre Le Sipahx hotel we headed out to Monastir.

The day we left Sfax, we passed through a new motorway, the President of Tunisia was there (also a lot of security) inagurating the road, so all the freeway was covered with Tunisian flags.
