I'm putting this tip here because officially speaking only guests at the Zambezi Sun hotel are supposed to visit this area of the hotel grounds:
This hotel has a statue garden area. Most of the statues are modern / contemporary art, and all have been made by African artists. Some are bizarre, some are beautiful, and others leave the visitor scratching their head.
While only those stying in the hotel are supposed to visit these grounds, I did meet one couple that had accidentally been allowed into this area, and in fact they had been looking for something else entirely. Possibly, if you are very interested in sculpture or art, you would be able to talk your way into this area of the hotel grounds.
The sculpture garden area is between the Zambezi Sun hotel complex and the gate for visitors to enter Victoria Falls.
If nothing else, this particular statue is a great reminder to not leave your rear end exposed while visiting Africa (that is: always be careful when you are in an unfamiliar place, and don't leave yourself openly exposed to hazards of a rediculous and overtly hazardous nature).

Across the road from the Zambezi Sun hotel complex, there is a road that leads to the Mukuni Village. Driving down this road maybe one hundred yards (meters) after crossing the railroad line, you will come to this huge tree on the right side of the road.
This tree is called the lookout tree. There is a small parking area underneath it and there is a starcase up to an observation platform built up in the heights of the tree.
I was told by my guide that there is a great view of the falls and the surrounding area from the platform. However, no one was visiting it when we went by, and I was never able to find anyone going that direction again to get a second chance to look at the tree and explore its upper reaches.
Thus, I am unable to report about the actual view from the tree.
This may be a good place to get a view of the falls during high water periods, when the mist from the falls obscures the view closer in.
I'm not sure that anything in a major tourist destination like this can really be describes as an "off the beaten path" activity but very few people seem to know about this tree and there doesn't seem to be any organized trips that stop at it to let people see what they can from the top.

If you have come to Livingstone, chances are you have came because you want to visit Victoria Falls. After all, that is the primary attraction and the basis of all the other tourist activities in this region.
The falls themselves are therefore certainly not an "Off the Beaten Path" activity, but very few people are in the park just as the sun is going down.
The national park closes at 6:30 pm.
On a particular day, I noticed that the sunset was going to be particularly nice due to the cloud formations coming. The time was about 6:05. Since I was staying at the Zambezi Sun, I could just run over to the gate to enter the falls. Being so close to the falls that I could have multiple entries to them was a major benefit, particularly in this case as all I needed was a quick access to the falls to get the sun slipping behind them. I was out of the park 15 minutes later.
