Spicy and sour food

Guizhou food is spicy and sour. One famous dish is Sour Broth Fish. You must have a try. Although each dish is cooked with hot chilies they'll still serve you a small dish of spicy flavoring. Mix with some soup and have a dip before eating. Only one word to describe: HOT!In Guizhou people like cooking in much oil. And to express their hospitality they may put more oil in. So if you're not keen on oily food don't forget to tell them beforehand.
