While it might feel great, speeding around the voluptuous side-roads of China, keep in mind that around any bend could be anything. An oncoming truck in your lane, kids playing in the street, a missing bridge, someone's house or any of a myriad of barnyard animals, such as pictured below. Keep it slow and enjoy the scenery!

If you have plans on hitching a ride with a bunch of locals in the back of a truck, the police might stop the truck you're in. So be cautious. The other problem pertains to the way people drive here- being flung from a truck wouldn't make for a great trip.
