consider the YMCA hotel in Kowloon. It is a short walk to everything and has excellent accommodations at reasonable prices.
Across the street is the Space Center and a lot of other interesting places to visit in this large center. If you enjoy Dim Sum, some of the best and most beautifully presented! Check out the Mongolian Barbecue also.
Ferry to HK is a short walk and the train station is right up the street in the opposite direction. From here, you will be able to go into the New Territories. It is very reasonable.
Try booking your entire trip through a Hong Kong travel agent like China Travel. Get two agents to bid for your trip. Save thousands over booking from US or Canada.

Such food, simply the best. And the culture, it is fascinating. But be sure and look into getting over to Shenzhen to see Splendid China and the two related adjacent sites. Almost like touring all of China in miniature. Most tourists miss this site and it is a really 5* place but you will need a China visa. Get there easily by train. Also by jetfoil up the Pearl River. Great fun, like a China trip at hardly any cost at all. Worth a day or two.

Fondest memory: Taking the Peak Tram from the Garden Road terminus to climb the 397 meters to the Peak Tower. The incline is so steep that it created an uncomfotable feeling in my neck.
