Hong Kong's home airline is Cathay Pacific, one of the most respected & high quality companies in the industry. I always ride Cathy Pacific when I travel to Hong Kong, for no other airline can beat its customer service & comfort. Another airline I would recommend is Singapore Airlines, for their service is excellent & their planes are very new!
With over 80 gates, it does take a long time to reach some of them, especially the ones with high numbers. Therefore, it is best to take the Automated People Mover ( a driverless underground train) to reach your desired gate.

As above by picek, Air Asia does offer budget flights between Hong Kong OR Macau and Bangkok and it's best to book well in advance for their best deals which they offer quite frequently (they are offering special deals all the time).
BUT, as a fellow SF bay area person (I live in Berkeley and SEA), you could fly Cathay Pacific (twice per day direct to HK, and you must book via a travel agent) which is Hong Kong based and they provide a FREE STOP EACH WAY as long as you stipulate these stops en route to/from Bangkok with your travel agent before buying the ticket. There's only the extra HK departure tax to pay.
I've been using Cathay Pacific for over 10 years to fly to southeast asia so usually stop to visit regularly in HK and Macau.
BUT again, you must book with a travel agent since the internet bookers do not allow for this free stop on the way to Bangkok (YES, it must be a Bangkok ticket though perhaps all their connecting flights in HK might also offer the same deal for say if you're continuing on to India or Bali, or etc). Only travel agents can do for this for you and the airfare is usually as good or slightly cheaper with the agent. If you see a special fare on the internet, tell the travel agent and they should be able to match the internet bargains.
I've just dealt with my travel agent on Monday for booking my flights to Bangkok for early November.
Also, be careful about Chinese New Year because the flights will be more expensive during this holiday.

In the main terminal of Hong Kong, there are many shops. Not only are there many shops in Terminal 1, but also Terminal 2, which is a short train ride away. Terminal 1 is generally more crowded, and includes a toy shop, Watsons, Mannings, several electronic stores, and several food stores. Terminal 2 has a Fortress, 7/11, several clothing stores, and several electronic stores as well. Hong Kong Airport shops are usually more expensive or on par with the prices elsewhere in Hong Kong, and there is no sales tax as with the rest of Hong Kong as well.

Flying to Mainland China? Consider the Shenzhen Airport
If you are flying to or from Mainland China, it may be cheaper to fly using the Shenzhen Airport. There is a shuttle bus between HK and the Shenzhen airport. Information is at the below web site. However, there is a lot of business travel between Shenzhen and other parts of the Mainland. So be sure to check using one of the travel web sites like www.elong.net. I was flying with Cathay Pacific from Manila to Hong Kong. It was my birthday so it only seemed like a good reason to sit "down front" in CX's new first class cabin.
The short hop flight is only 1 1/2 hours. The sky staff pulled all stops to make it memorable, not for just the birthday boy but the rest of us stretched out lapping up those new seats. So wide they can fit a whole opera star.
I got served a stellar roast of lamb nestled snuggly in a garden of roasted vegetables. My choice of English or German mustard? Some grand crux so smooth it floated down passed my ten mile high taste buds.
The crew gave me warm greetings for my day, a card they all signed and they kept bringing gifts. CX cards, a pen, even a whole box of their signature pralines and a bottle of Cuvee William Deutz Brut 1988.
Now here is the tip.
I was just changing planes at Hong Kong to continue to Vancouver.
The security staff confiscated the champagne.
Give it away to a passenger who is entering the country.

The main Hong Kong based air carrier; strong tie with Dragon Air, the best Greater China airline in the region. Traveller can fly to/from Hong Kong to many places with CX and her alliances. All of their aircraft are equipped with personal TV for all cabins, duty-free shopping items are so much that you may not have enough cash on board for them; food is not good but the quality is not bad comparing to other airlines; service is good at least you feel comfortable whenever you talk to their flight attendants.
Last but not least, they have only wide carrier, if you are afraid of tiny airplane encountering turbulance in the air, this is a good choice avoiding it.

When we arrived, we were surprised to see one long queue to go through immigration custom. Normally, there is a line each for each counter, now one line just for the many counters. Kind of make things slower, isn't it? Baggage collection is quite fast too and all passengers from Terminal 1 and 2 exit through the same arrival hall.
For departure, take note of which terminal your airline is. There will be quite a lot of walking as the terminals are big. To get to our boarding gates, we even have to take a train. Cool for some, a hassle for others.
Remember to pay a visit to the tourism counter to get some maps or advices before going off. The Airport Express counter is just outside the Arrival Hall to get your Octopus Cards. Restaurants and Shops are plenty and trolleys are available for free usage.

At the departure Terminal 2 of the airport, there are flight schedule display but no information is displayed on whether the gate is opened, boarding, last call.
This led to certain anxieties for departing passengers. We make it just in time for last call which we had not experienced for a long time since.
Travellers are advised to allow ample time from checking in to boarding.

Cebu pacific had this piso fare promo March of 2007, when i heard about this I immidiately run to my boyfriend just to tell him the news, i guess that was around 10pm in the office (since we work during the night) at around 4am we decidied to book to hongkong (w/o existing plans at all) it only costs us 2916php for a roundtrip ticket (MANILA-HK-MANILA). Though the travel tax of 1620php and the terminal fee of 750php is not yet included in the said fare. The fees that i mentioned were paid at the airport while checking in.

I'd like to post an advise in order to avoid Honk Kong Airlines.
The company is small and bad oriented about his fault.
They have lost my luggege in a single trip and never recovered (never happen
before in more than half milion of mile in flight).
After some day I recieved an offer of reimburse of 400 USD that it is the IATA
basis, but very far from my 1200 Euro of value in the bag (nothing of special,
only the common cloth for a business trip of 15 days).
Moreover was a delay of 4 hours in the flight for a tyfon in day before, but
Dragon air was in perfect time.
Bad experience, but for future I'll avoid this company
