There are a lot of places that you can go to that takes you away from the hustling and bustling of Hong Kong, in fact you forget that you're in Hong Kong... Places like Sai Kung hiking and Cheung Chow for biking is great. Shek O is pretty cool for food and just hiking...
Hong Kong has plenty of excellent walking trails, over lots of mountains. The views are brilliant and it is a great way to escape the crowds. It is probably better to visit in the cooler times of the year. Most trails are quite accessible by public transport, so ask the locals!
The Pok Fu Lam area is tranquil and has a lovely sea view, its is mostly residential area but there is a Pok Fu Lam reservoir there with the Pok Fu Lam Reservior rd leading up to the Peak, its another alternative to get to the Peak if you have the time, it takes around 1 to 1.5 hr to walk from the Reservoir to the Peak and on the way it is all trees and hills. There are many buses from Central going to the Aberdeen direction with stopes at the reservoir and it takes roughly 30 minutes from Central, but do not take the buses going through the Aberdeen tunnel. Of course it is not recommended to use this road after sunset.

Hong Kong is not juz shopping and eating paradise. Join this group of nature lovers who walk on every Sunday -- a really fun group!
Hiking on HK's many country parks. My fave is Dragon's Back, easy walk but very scenic, and there's a good Thai rest. at the end of the trail (Shek-O).
