Clothing/Shoes/Weather Gear: an umbrella is a must we travelled in june and it was wet!!!!
a poncho is also good for the kiddies and we noticed that alot of the locals were wearing wet weather boots, which was a great idea considering my daughters shoes sanpped at disneyland because they were so water logged..

Toiletries and Medical Supplies: The hospitals in HK are generally efficient and signs are clearly labelled in both Chinese and English, so there's no need to lug your whole family's medicine cabinet over. :)
Photo Equipment: Many areas in HK are very crowded, so keep that in mind when you are packing your photo gear as it might be troublesome trying to jostle with the crowd and handling your SLR at the same time.
