Pun Choi means assorted vegetables and food arranged in layers and served in basins as kind of tradition in New Territories for convenience. The villagers of Sheung Shui Tsuen brought buckets of pre-cooked food to ancestral tombs and distributed on the spot using basins to worship their ancestors on special days like Ching Ming and Chung Yeung Festivals. The descendants would have a feast in the countryside after the ceremonies. Pun Choi is also the cuisine in other occasions like wedding and birthday banquets for newly born and the elderly, also after funeral for person who died after 61 years of age in hoping for longevity. The original wooden basin is now replaced by clay pot and the food is served hot and immediately after cooking. Nowadays, It's the opportunity for friends and relatives to gather together and maintain the close relationships. Modern Pun Choi have the ingredients like abalone, prawns, chicken, roast pig, sea cucumber, dried eel, fried pork skin, beancurd skin, squid, fish ball, mushroom and vegetables. The food with thick sauces and strong flavours is placed at the top so that the sauce can penetrate down through layers.

Favorite Dish: Seafood Pun Choi, the medium size is already enough for 10-12 people.
