Padang food is the spiciest in all of Indonesia. Little has been done to compromise the chilli-heat, except for the white rice that (tries to) counterbalance the assertive flavours.Besides its acclaimed spiciness, Padang food is great. More common dishes are fried fish, chilli eggs or eggs in coconut milk, fresh vegetables in coconut sauce, beef rendang, grilled chicken...No need for refrigeration: as the heavily-spiced beef rendang can be kept for 3 or 4 days, it is said that years ago the Minangkabau traders of Sumatra would carry it along their long trips through the jungle and eat it with lontong (steamed rice wrapped in banana leaves).
